South Carolina is famous for its Mac & Cheese.   

Here the Mac & Cheese is baked and is loaded with all sorts of comfort ingredients.  You'll see it offered with Fried Chicken, Fried Okra and a side of corn bread. This recipe is outstanding.
Country Mac & Cheese

Ingredients:

  • 1 Pound  Box of Elbow Macaroni
  • 1 Pound Velveeta Cheese
  • 8 oz of Shredded Yellow Sharp Cheddar Cheese
  • 8 oz of Shredded Colby / Jack Mixed Cheeses
  • 8 oz of Fancy Shredded Mild Cheddar Cheese
  • 1/4 Cup Sour Cream
  • 2 Cups of Milk
  • 1 Stick Unsalted Butter (not margarine)
  • 2 Eggs
  • 1 1/2 Tsp Salt
  • 6 Grinds of White Pepper
  • 1 Tbs of Granulated Sugar
  • 1 Tsp Freshly Grated Nutmeg

Preparation:

Preheat the oven to 350 degrees F.  Cook macaroni until it is just al dente (to the tooth).  Place it in a baking pan that will allow about 3 inches above the macaroni.  While the macaroni is still hot, cut up the butter and mix it in.  Cut up the Velveeta cheese into cubes and add it in and give it a good, but gentle stir. The Velveeta will not completely melt. 

Add all of the remaining cheeses, except the Finely Shredded Mild Cheddar.  Blend the eggs with the milk using a hand blender.  Add the salt, pepper, sugar, nutmeg and eggs.  Add this mixture to the cheese and macaroni in the pan and stir it in well.  Sprinkle the top generously with the Finely Shredded Mild Cheddar.  Bake until the top is golden brown and the edges are bubbly.  Allow it to cool on the counter for about 15 minutes before serving.
